This is wonderful. And this time, it pays to read the YouTube comments:
It seems as if this is the first time he's making nachos since his wife died. Notice how at 1:00 he puts his fist down on the counter and has to build up the courage to even say how many people these nachos will serve. He then gazes off for a moment and realizes he won't be sharing these with anyone.
