Yeah, visual novels are a genre as broad as roleplaying games for instance. Phoenix Wright qualifies.
Hell, game mechanically speaking, Mass Effect should be included, but really "visual novel" is more a trope to do with the game's "payload" being mainly something you read, with (maybe) character sprites and (maybe) voice acting brought in to assist that. Everything looks animesque, and though most of these games have narrators, that narrator generally isn't responsible for attributing dialogue. Instead of Bob said to Alice, you see Bob's sprite with mouth open, and Alice's sprite with mouth closed looking pensive, and Bob's dialogue is on screen.
It's easy to mix other genres in with visual novels so you see a lot of that.

The game itself is hosted by a Thai game company, which is probably just those two guys again.

Guys I happily buzzsawed through faces in Bioshock Infinite but it was so hard being mean to T-Rex to see the bad ending.
Also I have a toy T-Rex standing on my desk and this game showed me he could really use a tie.

I gather that the game is supposed to be a satire of Japanese dating sims, but it's almost like David Lynch and Alfred Hitchcock were both involved in creating it. The surreal aspect of it is mostly due to the pigeons, however, because imagining this walkthrough with typical human characters places this into more familiar territory. But that simple juxtaposition is surprisingly effective and totally hilarious. I really want to play this game.

I don't know, I'd tend to define "visual novel" pretty narrowly - though the basics of gameplay with long conversations, character portraits, and player choices are folded into a lot of other genres, I'd say the other genre usually takes precedence. Thus Fire Emblem is primarily a strategy game, for example. Phoenix Wright is a visual novel because the only system it has is talking, even if the trial system is much more complex than the basic visual novel system.
On the dating sims thing, that's more a question of content than form. Tokimeki Memorial is often called the best-selling dating sim, and that has you going through a year at school and building up your character by going to gym class or the library, so there's this stat-building game backing up the story, which does unfold in visual-novel style segments. Sakura Taisen II is often called the second-best selling dating sim, but a lot of the gameplay time is Final Fantasy Tactics style battles. Riviera had dating sim elements, but it was structured like an RPG with a lot of dialog rather than a visual novel - the story was kind of linear but branches were determined by your interaction with the environment rather than with characters. Higurashi and Umineko no Naku Koro ni are definitely visual novels (they're called "sound novels" technically but it's a moot point), but they're strictly linear (no player choice) and the in-game stories aren't focused on romance.
So the standard, branching-conversation dating sim is a visual novel and doesn't have much game to it; some romance games are more technical but keep a lot of weight on simple branching choices, and some other ones have more complicated gameplay that has nothing to do with visual novels.
I don't always understand why developed romance subplots are paired up with complex game mechanics, but if we can have a Diogenes reimagined as some kind of wizard girl lead your army to world conquest I'm not really going to complain.

I think the defining characteristic for me is whether I can set it to autoplay until I reach a decision point. [Totally awesome feature if you want to, say, crochet and play a game at the same time.] If yes, visual novel. If not, something else.
