Chef Paxx Caraballo Moll is a rock-n-roll chef who creates inventive vegetarian food with the native foods of Puerto Rico.
They're also one of nine individuals profiled in Mala Mala, a feature length documentary exploring the lives of young Puerto Ricans in the trans community that recently premiered at the Tribeca film festival.
Moll uses they/them pronouns. Trans 101.

Goddamn, my wife and I were in PR in March for our honeymoon and I really wish we'd have known about this place because everything about it sounds amazing and jesus christ:
...summer gazpacho of cucumber, chayote, and tomato with chile-infused olive oil and pulverized tostones; breadfruit beignets with housemade tarragon syrup; pumpkin cutlets with pomarrosa salsa and roasted beets; eggplant stuffed with sweet chili and mashed bananas with charred kale; and an open-faced sandwich with a plantain pattie, queso fresco, heirloom tomato, and banana-mayo ketchupposted by griphus at 10:08 AM on June 30, 2015 [3 favorites]

For those interested in the documentary, it opens tomorrow (July 1) at the IFC Center in New York. I can't find anything about other locations or streaming/home video availability.

Why are the pronouns plural in the story?
Food looks awesome.
And why can't he (they?) get testosterone in Puerto Rico?

Keith Talent, as noted in the original post, Moll uses they/them pronouns. Here is a very 101-type article explaining they/them pronouns.
Gender affirming hormone therapy in the US is often expensive, not covered by insurance, difficult to obtain, and can involve jumping through a lot of medical hoops. I don't know what it's like in PR, but I'm assuming it's more difficult, to the point of being impossible for Moll.
