I've hand cut dove tails and that is hard enough! Especially when you're on the clock and your boss is wondering *why* you have to do it that way when you're restoring someone's antique furniture.

The Japanese make wood saws that can bend as you cut with them. It's insane.

Blimey. It's hard enough getting a knife sharp enough to slice onions. I was a hobby book-binder for a few years of Tuesday evenings in the 1980s: another craft that requires super-sharp edges. The gaffer was immensely patient and kind enough to put an edge on mine on request. Probably because he didn't like blood on the end-papers.
