Adam from the very popular "Worth It" video series, exposes that he is as much of a charming curmudgeon as we all expected, and is also a very good instructional cook for fast-food vegan cuisine. I watched it without sound on so I didn't get any verbal instructions. Is the tofu maintaining its nugget shape (before battering) because it was frozen? He doesn't add anything to hold it together, right?
I'm not a big fan of egg-replacer. For vegan battering, there is a "better batter" recipe in the book Vegan Japaneasy that uses household staples and produces better results.

Right. He he had the same concern - he was so worried he called Fred, the guy from the restaurant who gave him the recipe, to make sure he was doing it right.

My wife has a theory that garlic powder + onion powder with salt and glutamate (mushroom powder here) is THE American flavour. It's Doritos, it's ranch, it's in a lot of sausage. It has to be the powder form, in particular, not fresh garlic and onions---that's also delicious but has a different profile.
When I started adding the combo to my smoked fish brine, it certainly took it from good to amazing.

These look so good, but I cant bring myself to even attempt them because of the double freeze. I dont have time/freezer space for that shit!

That said, I think it is fun to see him (try to) make some of recipes they have encountered during the shooting of previous Worth It seasons! Last month he had a go at Vinegar Pie.
