Notorious Vinaigrette Dressing

Food52 has the recipe. Those expecting something earth shattering, like I did when I heard about this "scandal", might be disappointed. It is just a simple vinaigrette. Maybe the secret ingredient is love?

Anything that references a roman a clef , human foibles of the heart, and pseudo anonymous MacGuffin Muffin salad account is pretty great. But there has to be a better name for these curated performance content projects.

I mostly come away generally impressed with how O. Wilde is handling it - that was a clever turn.

But Ephron/Wilde’s dressing is a simple emulsion of Gray Poupon, red wine vinegar, and olive oil.

That's a very standard dressing that you'll find in most cookbooks.

Ephron writes that it’s “perfect for salad greens like arugola [sic] and watercress and endive”.

Those greens are why it's so bitter. Endive, in particular.

In a fit, Sudeikis throws the salad on the floor and microwaves some dino nuggets. But then remembers Wilde's homemade barbecue sauce. ALL FOOD IS RUINED!!!

Yeah, it's a standard recipe, but if it opens a younger generation's eyes to the fact that a good vinaigrette uses only a handful of ingredients and is easy to make, great!

It's worth a chuckle to me that thanks to this dogs' mess of the Wilde/Sudeikis/Styles love triangle, we now have an a "adultery salad dressing" recipe to go with all the "marry-me chicken" recipes that are floating around.

I'm baffled at the people who...want to discuss actual salad, in great depth, when this stuff comes up. Like hi, it's a joke, but you really really want to discuss the minute details of a salad?!

That said, I totally lulzed at the Nora Ephron post. Olivia seems to be fairly well divey/shady in a lot of respects, but that was funny. It's a shame Nora's not around to laugh at the joke.

I'm just amused that it's the salad that the dressing is partnered with that's the bitter portion. The poor dressing gets all the blame, but all it's doing is all it's ever done, marry oil and vinegar, uniting two ingredients that have no business being together most of the time.

There's some parallels that could be drawn there I'm sure, but I'm too much of a literalist to see them.

The third ingredient, the emulsifier, the mustard, is what makes them mix. Perhaps more of a triangle than a divorce-based pairing?

My personal dressing:

A dollop of maille Dijon

Glug in good olive oil and whatever vinegar you like (I usually do plain white vinegar) and whisk to desired consistency

Good squeeze from a tube of anchovy paste, bit of salt and pepper

Sugar or a little bit of orange juice if you like it a little milder (I often skip this step)

I make a mason jar full of this to keep in the fridge and it lasts for many salads. It's a pretty decent marinade for meat too
