Nice find - thanks.
Regarding the oyster omelette - I've had the Fujian version and it was by far the best, mainly because of the variety of oyster used there - a very small sweet oyster.

I love Thai oyster/mussel pancakes with sriracha sauce. I didn't know that they make them in the Chinese-speaking world as well.
