Excellent, I know what I'm watching later. If watching longer videos of Japanese restaurant chefs cooking with no real narration interests you, I strongly recommend the channel Japanese Noodles Udon Soba Osaka Nara. They have an astonishing number of videos, each one focused on a single day in a single restaurant.

From the Sushi Noz OpenTable page: the default booking option is "Omakase ($550/Person)". I'm not surprised by this tbh, especially given the location and most of the fish coming straight from Japan.

I'm wondering if there's a tradition of sushi masters in Japan catering to more modest budgets. Certainly there's "budget sushi" available just about everywhere in big cities around the world. But nowhere near this level of mastery and performance.

I was doing so well, feeling like I didn't need to go out for another high-end sushi meal, until I saw this. NYC prices and the fact that I'd also need to arrange travel to NYC are what's keeping me from booking a reservation.

A couple years ago, my wife and I celebrated a big accomplishment of hers with a lunch at Sushi Nakazawa in Washington, DC, opened by the former apprentice chef featured in Jiro Dreams of Sushi. It's got a Michelin star, and an omakase meal for two there will run you about half of what it costs per person at Sushi Noz in NYC. We were served more than 20 courses, and I also opted for the sake pairing. Every bite was worth every penny, as I'm sure is the case at Sushi Noz.

You know, I’ve watched this clip probably 10 times, and it never even occurred to me to wonder how much eating there cost.

It’s a bit like wondering how to pace myself driving in Le Mans. Not an issue I’ll ever have the opportunity to grapple with.

Yeah, as soon as I saw that they do 8 customers a day I realized that I will never eat there.
